Happy Valentine’s Day! Who’s spending some quality time with a special someone today? To be honest, Simon and I don’t really celebrate this lovey-dovey holiday but any occasion is a good reason to enjoy tasty food in good company. I’ve created a three-course vegan Valentine’s Day menu to give you some inspiration + I added some extra ideas for sweet snacks. After all, one can never have too much chocolate on Valentine’s Day, right?
- Appetizer -
I know, summer is still far away but I love serving this gorgeous pink gazpacho any time of the year!
- Main -
Pasta with Roasted Butternut Squash & Kale
Ready for an iconic 'Lady and the Tramp' spaghetti kiss scene?
- Dessert -
Berry Cheesecake with Vanilla Almond Crust (from my cookbook Vegan & Raw, p. 170)
If you’re going all out, this cheesecake won’t fail to impress. No time to make it yourself? You can order our signature cheesecakes right HERE (if you live in Belgium – pick-up in Ghent or Antwerp).
Or how about these sweet chocolate treats…
Make sure to prepare it an hour or longer in advance – it tastes so much better when it’s chilled!
Crunchy Almond Butter Banana Ice Cream with Raw Chocolate Sauce
What can I say, chocolate covered ice cream is always a winner to me!
If you still have some room left after that 3-course meal, try these gooey caramel candies with a cup of tea or coffee.
