I have these weird cravings… Not for chocolate - although I like my banana cacao nib boats ☺, not for ice cream, not even for cookies! I have cravings for spicy vegetables. Purple Cabbage Wraps with Lemon Dijon Guacamole
SERVES: 2 small wraps
EQUIPMENT: chef knife, cutting board, small mixing bowl
INGREDIENTS:
Lemon Dijon Guacamole
1 medium avocado, pitted and roughly chopped
1 teaspoon of lemon juice
1 teaspoon of Dijon mustard
1/8 teaspoon of Himalayan crystal salt or sea salt (or more to taste)
Fresh cilantro to taste
Purple Cabbage Wraps
2 medium leaves of purple cabbage
1 small pear, julienned
½ small black radish, julienned
½ small red bell pepper, julienned
½ medium carrot, julienned
DIRECTIONS:
Lemon Dijon Guacamole
- Mash the avocado into smaller pieces with a fork.
- Add lemon juice, Dijon mustard, salt and cilantro into the mixing bowl. Mix well.
Purple Cabbage Wraps
- Use the purple cabbage leaves as the base for your wrap.
- Add pear, black radish, red bell pepper and carrots to the wrap. Finish with a generous portion of lemon Dijon guacamole and extra cilantro.
JULIE’S TIPS & TRICKS:
- This lemon Dijon guacamole will quickly lose its taste once you put it in the refrigerator. I know you probably have a very busy schedule like most of us, so if you would like to save time in the kitchen you can cut your vegetables in advance and store them in the refrigerator. This way, you will have everything ready and more then enough time left to whip up a fresh bowl of guacamole!
- If you don’t like cilantro, you can replace it with other herbs of your choice such as basil, parsley, rosemary… Or why not add watercress for a change?
