Persimmons are back in season and since they’re one of my favorite seasonal fruits I thought it would be fun to share a few persimmon recipes with you during the next couple of weeks, starting with the Ultimate Vegan Taco Salad with Persimmon Avocado Salsa. If you like Mexican cuisine, you’ll love this comfort food meal! It’s super flavorful, very filling and really easy to prepare. Definitely try the salsa with your favorite crackers as a snack as well!
Vegan Taco Salad with Persimmon Avocado Salsa
SERVES: 2 people
EQUIPMENT: large mixing bowl
INGREDIENTS:
Persimmon Avocado Salsa
2 ripe persimmons, chopped
1 large ripe avocado, chopped
½ small cucumber, diced
1 stalk of spring onion, finely sliced
1 handful of fresh cilantro
Chili pepper (optional)
Fresh lime juice
Himalayan crystal salt or sea salt
Mexican Taco Salad
1 large head romaine lettuce, shredded
1 large cup cooked quinoa
1 cup cooked beans (adzuki, black, kidney…)
1 large handful cherry tomatoes, cut in half
ALL GOOD Tortilla Chips (or other tortilla chips)
DIRECTIONS:
Persimmon Avocado Salsa
- Combine the persimmon, avocado, cucumber, spring onion and cilantro in a large mixing bowl. Stir well.
- Season with chili, lime juice and salt to taste.
Mexican Taco Salad
- Assemble the salad on a large platter or individual plates: romaine lettuce on the bottom, quinoa and beans (great sources of plant-based protein and fiber!) in the middle, followed by cherry tomatoes and a few heaping tablespoons of salsa. I like to add a drizzle of extra virgin olive oil, some black pepper and a sprinkle of salt for extra flavor.
- Serve the tortilla chips on the side so they stay nice ‘n crunchy.
JULIE’S TIPS & TRICKS:
- Are persimmons out of season? Replace them with mango, peach or pear.
- If you like smoky flavors, serve this taco salad with some Smoked Cashew Cheese Sauce. Absolutely delicious!
