Do you often feel hungry in the morning somewhere around 10 or 11 AM? You’ve had your breakfast & you should be satisfied until lunchtime, but you can’t help it: you crave something sweet and you want it now! Instead of reaching for that traditional candy bar filled with sugar & processed junk, treat yourself to a healthy snack like these Superfood Energy Bars. They are nutritious, super easy to make and surprisingly addictive!
Superfood Energy Bars
SERVES: 4-6 bars, depending on the size
EQUIPMENT: food processor, rubber spatula, baking pan, baking paper
INGREDIENTS:
½ cup of almonds, soaked overnight & dehydrated until crisp
½ cup of cashews
¼ cup of pumpkin seeds
¼ cup of goji berries
¼ cup of dried coconut (only add this if you’re a coconut lover)
¼ cup of cacao nibs (optional)
2 tablespoons of hemp seeds
2 tablespoons of chia seeds
2 tablespoons of extra virgin coconut oil (optional, you can replace this with water for extra binding or use soaked almonds)
1 teaspoon of pure vanilla extract
½ teaspoon of Himalayan crystal salt or sea salt
1 ½ cup of dates, pitted and roughly chopped
DIRECTIONS:
- Combine almonds, cashews and pumpkin seeds in the food processor fitted with an S-blade. Mix until coarsely ground.
- Add goji berries, dried coconut, cacao nibs, hemp seeds, chia seeds, extra virgin coconut oil, vanilla extract and salt. Mix until well combined.
- Add dates and mix again.
- Once the dough is ready, line your baking pan with baking paper (or plastic foil if you wish) and scoop the dough into the baking pan.
- Shape and cut the dough into energy bars.
- Place the bars in the refrigerator for at least 30 minutes or in the freezer for at least 15 minutes.
JULIE’S TIPS & TRICKS:
These Superfood Energy Bars will stay fresh for at least 1 month in an airtight container in the refrigerator, and 3 months in the freezer.
