Did you enjoy the Chocolate Peanut Butter Ice Cream we made two weeks ago? I hope you did, because we’re making more ice cream today! This time not a dessert but a Healthy Breakfast Parfait with Banana Ice Cream, Raspberry Chia Pudding and Coconut Yogurt. I love how all the flavors in this breakfast parfait come together with every spoonful. The chia pudding and the yogurt are really creamy, the green banana ice cream is nice and sweet and the berry ice cream adds a refreshing sour flavor to it. A delicious and nutritious way to start the day!
Healthy Breakfast Parfait | Banana Ice Cream, Raspberry Chia Pudding & Coconut Yogurt
SERVES: 2-3 people
EQUIPMENT: food processor, rubber spatula
INGREDIENTS:
Layer 1: Berry Ice Cream
2 cups frozen berries
4-8 tablespoons non-dairy milk, unsweetened (I used rice coconut milk)
Layer 2: Spirulina Banana Ice Cream
3 large ripe bananas, frozen and roughly chopped
4-8 tablespoons non-dairy milk, unsweetened (I used rice coconut milk)
½ to 1 teaspoon spirulina powder
Layer 3: raspberries
Layer 4: coconut yogurt with spirulina (or other non-dairy yogurt)
Layer 5: raspberry chia pudding - recipe from my new book Vegan & Raw 2
Toppings: berries, coconut, chia seeds
DIRECTIONS:
Berry Ice Cream
1. Put the frozen berries in a food processor fitted with an S-blade. Process until finely ground.
2. Add the milk. Process until smooth, stopping occasionally to scrape down the sides of the food processor with a rubber spatula.
3. Transfer the ice cream into a large jar and put it in the freezer while you make the green ice cream, so it doesn’t melt.
Spirulina Banana Ice Cream
1. Cut the frozen bananas into smaller pieces with a sturdy knife.
2. Put the frozen banana chunks in a food processor fitted with an S-blade. Process until finely ground.
3. Add the non-dairy milk and spirulina. If you’re not used to the taste, start with ½ teaspoon - I like to add 1 teaspoon at least. The bananas are more than sweet enough to balance it out.
4. Process until smooth, stopping occasionally to scrape down the sides of the food processor with a rubber spatula.
Breakfast Parfait
1. Serve the ice cream parfait in two bowls or glasses.
2. I like to start with a scoop of berry ice cream, followed by a big scoop of spirulina banana ice cream, and a nice layer of coconut yogurt with some raspberries. To give the yogurt a funky color, you can add some extra spirulina.
3. Finish with some raspberry chia pudding on top. I love serving the ice cream parfait with this vanilla chia pudding too!
4. Garnish with chia seeds, coconut flakes and berries.
JULIE’S TIPS & TRICKS:
• This breakfast parfait will stay fresh for at least 2 days in the refrigerator.
• Spirulina is really detoxifying and a great source of protein and iron - so you’re basically having ice cream for breakfast that is packed with nutrients
• You could add some maple syrup (or other sweetener) to the berry ice cream if your berries are very sour, but I usually don’t add any since the chia pudding and banana ice cream are more than sweet enough.
